No Knead Bread


based on this recipe. It contains lots of good info - below is the abridged version for the impatient and barely-literate.

Ingredients:

3 cups of flour

1.5 cups of water

2-2.5 tbsp salt

0.25 tbsp instant yeast

The dry ingredients, well mixed in a glass bowl

Water added, now mix well until all water is absorbed. 1

After sitting covered with a lid in a warm spot to rise for 14-18hrs

Dump dough onto bed of flour on parchment or wax paper. cover dough with lots of flour...

...so none of the paper sticks to it when you wrap it like this2. Let the package rest for 1.5-2 hrs on the counter.

Preheat oven to 475F/250C with baking dish3 inside. once its hot enough, dump the dough off the paper into the baking dish and cover. make sure the lid leaves enough space for the bread to rise. Bake for 30 minutes, remove lid, bake for another 12-20 minutes, depending on your oven and taste.

Remove bread from SUPERHOT baking dish. Let bread cool off for at least 1.5 hrs - its still baking.


1 - Use a glass container to mix the ingredients and let the dough rest in it - the dough will stick to most other materials.
2 - Make sure the dough is covered completely with flour before folding the paper over - or it will be messy when you try to dump it into your baking dish.
3 - Check that the baking dish can handle 475F and that the handle of the lid survives without melting. The pic shows what happened to my Pyrex bowl after making a few loaves, it was only rated for 425F, as i found out the hard way.
